On Christmas morning

Christmas traditions simply express what the season means. According to History Channel, people starts to give gifts to the loved ones, following the Wise Men (Magi in the Bible) when they brought precious gifts from afar to visiting Baby Jesus. On Christmas morning, everyone in the family will take turn to open their presents. All you can hear, probably the 'ooh's or 'ahh's over the presents.

As for a small family like us, the highlight is on our little princess. I bet you get what I mean from her reaction in the uploaded video. Sesame Rice for Confined Women

There are three ladies in my fellowship group have just delivered in October and December recently. I cooked this sesame rice for one of my friends who has nobody to help her. Last time, a sister from Taiwan cooked this for me during my confinement. Very often, we bring this for traveling cos it just too convenient to bring along. This menu can help one's bower movement.

Swai Fish Porridge

Swai is interchangeable with basa, a Vietnamese species of catfish. Today, this budget-conscious cook choice is gaining popularity. Anyway, I go for a simple delicious fish porridge as my daughter likes porridge very much. She needs high protein to grow.

(1) Marinate bite size swai fish with oil and ginger slices, about 5 minutes,
(2) Wash and rinse the rice thoroughly,
(3) In a small pot, boil fish and dried scallops, 10 minutes,
(4) Bring the rice to boil,
(5) Add (3) into (4), cook in simmer frame for about 1 hour,
(6) Meanwhile, prepare some fried shallots (small red onion) ,
(7) Sprinkle little sesame oil, soy sauce, spring onion and the fried shallot unto the porridge and serve.

Good menu to nourish your body!

Yummy Simple Tortilla Snack

 Tortilla is a Mexican tradition food. But, my family just love it in a simple way. Less than 15 minutes of preparation, you'll have the all set yummy tortilla snack. Feel free to follow the simple directions and enjoy!

(1) Butter the iron pan, (1/2 Tbsp for 4 piece of tortilla)
(2) Heat up one tortilla in the pan, this recipe I use organic flour tortilla

(3) Spread the pizza sauce on the tortilla,
(4) Add some shredded mozzarella cheese,
(5) Fold the tortilla into half,
(6) This simple snack is ready when the cheese is melted.


My cooking strikes for less oil, no fat if possible and close to nature flavor.
Nutrition info: Mozzarella Cheese is high in calcium, comes with Vitamin.A, Riboflavin and  Thiamin; One tortilla contains 10% calcium and 6% iron, etc.

What a Merry merry Christmas for Faith

My little Faith got all her wish-list Christmas presents this year. She received a full bag of winter wears from her school at Martin Drive. She needed a winter dress boots, she got one now. Her favourite are the bear and her shinny princess shoes. What so surprises me is that her name is on the shinny shoes! She will wear the shinny shoes everyday at home (size 9 just slightly bigger for her now ;)) More to come, coz her dad gonna to thrill her heart on Christmas Eve with her desperate-wanted gift!

A call to a mom

I personally believe that parenting is a sacred calling and the greatest privilege ever given unto me. My commitment in parenting brings eternal values. Nothing more regret than missing my baby's every stage in growth, development and milestone achievement. Basically, my job is to raise, to nurture, to teach, to guide, to direct, to promote, to cultivate, to protect and to just being-there whenever she needs me.
There is more joy than tears in a mom's life. Open your heart and take it!
