Orange Frosted Lemon Cake

It's June 1st! This is a big day. A birthday for many people - my middle school roommate, my gone-too-soon brother-in-law and also the special one my ... (shh ...). My little princess told her dad "Daddy, shh..., Mom and I are gonna to make you a cake. Shh..., it's a surprise!" (^-^)

Well, today is also the great harvest celebration for Dayak native people in East Malaysia. Happy Gawai Dayak to my old friends. 



 Ingredients:
1 cup unsalted butter, room temperature
1 cup granulated white sugar
4 large eggs
1 tsp pure vanilla extract 
lemon zest from 1 lemon
2 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 cup fresh lemon juice

Orange frosting:
8 oz cream cheese, room temperature
3/4 cup confectioner's (powered or icing) sugar
2 Tbsp fresh orange juice (or lemon juice)

Decoration:
1 fresh kiwi fruit
blackberry jam
Fresh blackberry fruit

Directions:
1. With or electric mixer (or hand mixer), beat the butter and sugar till light pale color
2. Add in egg one at a time, mix well at each addition
3. Add in vanilla extract and lemon zest
4. Sift the flour, baking powder and salt
5. Mix to get smooth batter, add in lemon juice
6. Pour (3) to (5), mix well
7. Pour the batter into a lightly greased 9" baking dish
8. Smooth with spatula
9. Bake in pre-heat oven, 350 degree F, 40-45 minutes
10. In a mixing bowl, combine the sifted confectioner's sugar with cream cheese and juice
11. When the cake is cooler,  cut flat the top part of the cake, frost with (10)
12. Decorate with kiwi, blackberry jam and fresh blackberries
