Coconut Milk Dessert (Kuih Bakar)

This dessert received many good comments among my American and Chinese friends. I like to bring this to a potluck event because it is easy to prepare, good at taste and it tells where I come from. We personally like the fragrance and the taste of coconut milk with roasted sesame seeds. Beautiful refreshing color too.



 
Ingredients:
3 large eggs
400ml (1 can) coconut cream
50 ml water
1/2 tsp pandan paste (fragrant green leaves, found in Asian store)
4 oz all purpose flour
4 oz fine sugar
1/2 tsp salt
sesame seeds

Directions:
1. Preheat oven at 350 degree Fahrenheit
2. Beat eggs and sugar till dissolve
3. Mix pandan and water and coconut milk
4. Mix flour into (2) and (1)
5. With High power, microwave the mixture until slightly thicken
6. Pour the thicken mixture into a big cast iron pan
7. Sprinkle on sesame seeds and bake for 45-55 minutes
8. Let cool, cut and serve warm or chilled
