Ingredients:
8 oz chicken breast, bite-sized
4-5 shittake, soaked and cut
half package of dried bean curd, soaked and cut
2 garlic, smashed
2 ginger, thinly sliced
1 medium size carrot, sliced
salt to taste
Directions:
1. Boil 1/3 full of water (or chicken stock) in a pot
2. Put in all the ingredients in the boiling water
3. Add more water to cover everything, as necessary
4. Bring it to boil, then turn into small medium flame, slow cook for 30 minutes
5. Season with salt to taste
6. Sprinkle with some spring onions and serve warm
Note: Enjoy this refreshing and handy chicken soup. I got good compliment from my husband ;)
