Furry Melon (Mao Gua-节瓜) Beef

Furry melon is another light green squash with furry outer skin, It is good for soup, stew or even simple egg fried. The wonderful of this recipe is that no water (or stock ) is added. It just pure melon and beef. To make the beef nice in flavor, marinate in advance the beef slices or beef stew for at least 24 hours in fridge.






 Ingredients:
1/2 pound beef slices or stew
1 medium size furry melon, peeled and thinly sliced
1 tsp canola oil
Salt to taste
Green onion (garnish purpose)

Marinate dressing:
1 tbsp soy sauce
1/2 tsp sugar
1/2 tsp salt
little black pepper
little ginger, minced
2 gloves garlic, minced

Directions:
1. Heat the cooking oil in medium flame
2. Stir fry the marinated beef, 3 minutes
3. Add in the furry melon slices on top of the beef (no stir or mix at this stage)
4. Cover everything and simmer in low-medium flame, 5 minutes
5. Lightly stir the mixture
6. Cover again and simmer for another 15 minutes, or until the melon turned transparent
7. Season with little salt and garnish with green onion
8. Serve immediately over rice or grain
