Simple Fried Rice with Fried Chicken

Guess what? The alternative to KFC fried chicken is the fried chicken from local groceries store like Albertsons, King Soopers or Safeway. This time we got one bucket from King Soopers, served with fried rice. Check on the simple recipe below. This yields two adult servings plus one little child ;)






Ingredients:
1 cup cooked rice
yellow pepper bell, tiny cut
carrot, tiny cut
1 shallot, thinly sliced
1-2 egg
1 Tbsp canola oil
2 piece green leaf lettuce
1 piece fried chicken

Directions:
1. Heat canola oil and brown the shallot
2. Stir fry the yellow pepper bell and carrot
3. Gather at one corner of your pan/wok, beat in egg(2)
4. Before the egg is set, stir fry with cooked rice
5. Coat well and flavor with little soy sauce, salt and pepper to taste
6. Garnish with green leaf lettuce

Note:
You can serve the chicken with french bread too. Anyway, remember to drink lots of water or juice, and eat many fruits because this menu indeed yummy, be very heaty, especially for those who take light food like us. I was sick two days right after eating these fried chickens!

After all, I prefer the healthy oven-baked fried chicken. Maybe taking this oil type deep fried chicken the most three times in a year.
