Healthy Crispy Oven-fried Drumstick

Chicken breast is our all-time choice because white meat is considered healthier. In contrast, dark meat (chicken thigh or drumstick) is higher in cholesterol but is much tender. Sometimes, we go for thigh or drumstick.

Got these drumstick from Safeway, they look fresh and nice. During these freezing snowy days, I'm thinking of fried chicken. But, I don't want a greasy kitchen nor the fatty meat.

Ingredients: 
1 cup low fat sour cream  
6 chicken drumsticks, with skin  
2 cloves garlic, minced   
2 cups crushed cornflakes cereal  
1 tablespoon crushed dried rosemary  
1 tablespoons garlic powder  
salt and pepper to taste  
NO OIL
    Directions: 
    (1) Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on top of a large cookie sheet. Spray the rack with vegetable cooking spray. 
    (2) In a medium bowl, mix together sour cream and minced garlic.  
    (3) In another bowl, stir together the cornflake crumbs, rosemary, garlic powder, salt and pepper.  
    (4) Coat the chicken with the sour cream mixture, then roll in the cornflake mixture. Arrange chicken pieces on top of the cooling rack. 
    (5) Bake for 1 hour in the preheated oven, until meat is no longer pink, and juices run clear.

    Note: Sour cream can be substituted with flour + eggs + milk.
