Baked Spaghetti Frittata

A frittata is an Italian omelet or quiche. This egg-based dish is essential with spaghetti or potato, and enriched with additional ingredients such as meats, seafood, cheeses and vegetable.


Preparation time: 15-30 minutes
Total cooking time: 25-35 minutes
Serves 4

Ingredients:
175g left-over seasoned chicken, sliced
150g celery or 1 pepper, chopped
100g mushrooms, sliced
100g spaghetti, cooked and chopped
250ml (1 cup) milk or cream
4-6 eggs, at your preference
1 Tbsp onion, chopped
1/2 cup Swiss cheese or Parmesan cheese
2 Tbsp chopped fresh parsley (optional)
1/2 Tbsp butter
salt and pepper to taste

Directions:
(1) Preheat oven to 350 F. Grease the baking dish (9")
(2) Melt the butter in pan, add onion and mushrooms, cook over low heat 2-3 minutes
(3) Add celery or pepper, cook 1 minute
(4) Stir in chicken
(5) Remove plan from heat and allow mixture to cool slightly
(6) In a small bowl, whisk eggs and cream gently, add in salt and pepper to taste
(7) Mix (5) with (6)
(8) Sprinkle with cheese, bake for 25-30 minutes
