Ground Beef Rice
I miss the ground pork rice (肉燥饭), by my Taiwanese friend, Debbie. She cooked with bean paste that she got from Pacific Ocean Marketplace. I understand that some will add in Five Spices power (五香粉), but I'm gonna make it my personal version with no Five Spices, no pork but beef. My husband prefers beef than pork after watching documentary about swine farming.
Ingredients:
1 lb ground beef
3 garlic cloves, minced
1 shallot, minced
5 shittake, soaked in warm water for 15 to 20 minutes
1 cup water (or beef stock)
3 Tbsp Kikkomen soy sauce
1 Tbsp dark soy sauce (for coloring)
1/4 tsp sugar
1 Tbsp miso paste (mix with 2 Tbsp water)
1/4 cup corn starch syrup
1 tsp canola oil
Directions:
(1) Heat your saucepan and canola oil
(2) Cook the ground beef and sliced shittake in medium heat, 8 minutes
(3) Add in soy sauce, dark soy sauce, sugar, stir well, 1 minute
(4) Pour in water, stir well and bring to boil
(5) Turn into small heat, simmer for 10-15 minutes
(6) Add in corn starch syrup, mix well
(7) Turn off the heat, add in miso syrup and mix well
(8) Flavor with little salt and pepper, sprinkle with sesame oil
(9) Serve warm over cooked rice
Note: Take about 1 Tbsp corn starch to yield 1/4 cup syrup
