Three Cups Chicken (三杯鸡)

3 Cups Chicken (San Bei Ji) is a popular dish in Chinese Cruisine. The name derives from the use of three essential condiments - sesame oil, soy sauce and Chinese wine. The ratio for each condiments usually 1:1:1. However 1 cup of oil definitely too greasy and unhealthy. Let's check on my version of 三杯鸡!




Ingredients:
6 drumsticks (or thigh, dark meat tastes better in this recipe)
5 slices ginger
6 cloves garlic, smashed
1 Tbsp oil (vegetable oil, sesame oil)
1/4 cup soy sauce
1/3 cup sake, Japanese rice wine (or Chinese cooking wine)
1 Tbsp dark soy sauce
1/2 tsp sugar
little scallion (green onion spring/celery leaves)

Directions:
(1) Wash and rinse the drumsticks, cut each into half to quicker cook
(2)  Check the readiness of your DRY heating utensil - medium size running water drops (check on the last part of Tips for healthy cooking)
(3) Brown the chicken in all sides, this shall force the fat out from the chicken skin in medium flame
(4) Remove aside the chicken
(5) Add in 1/2 Tbsp vegetable oil
(6) Brown the ginger slices and garlic cloves
(7) Add in the browned chicken, stir fry in medium flame
(8) Add in soy sauce, sugar and 1/2 Tbsp sesame oil; continue to stir
(9) Add in sake and bring to boil
(10) Then, turn into low flame, simmer for about 15-20 minutes
(11) Garnish with scallion, serve over cooked jasmine rice

Note:
Sake is perfect to add sweetness to the dish. If you want the dish to be less watery, reduce Sake.
During browning, turn over the chicken only when it is no more sticking, usually after 3-4 minutes.
