Orange Chicken with Vegetable

This is a salad dish with homemade dressing, serve warm.

Ingredients:
8 oz chicken breast, cut in halve, 1/2 inch thick
8 oz broccoli florets
1 small carrot, sliced
1 fresh orange, sliced (garnish)
1 tsp canola oil


Dressing:
1/3 cup orange juice
1 Tbsp olive oil
1 tsp sesame oil
1 Tbsp Japanese seasoned rice vinegar (Marukan)
1 garlic clove, minced
1 tsp ginger, minced

Directions:
(1) In a saucepan, blanch the broccoli, 3 minutes
(2) In a small bowl, mix the ingredients for dressing
(3) Heat your pan and check the readiness for browning chicken
(4) In medium heat, add canola oil and brown the chicken breast, 3-4 minutes each side
Tips: Attach the breast tightly to the pan, press down the breast while browning.
(5) At browning, season the cooked side of the breast with salt and pepper
(6) Remove the cooked chicken and cut into slices
(7) Turn off the heat, pour the dressing and carrot into the pan right after the removal of chicken
(8) Stir (6) to mix well
(9) Arrange broccoli and chicken in a serving plate
(10) Pour (7) unto (8)
(11) Garnish the dish with orange slices
