Ingredients:
1/2 chicken breast, unskinned
1 1/2 Tbsp soy sauce
1 tsp sugar
1/2 tsp sea salt
1/2 tsp white pepper
1 tsp canola oil
1 small shallot (red onion), thinly sliced
Directions:
1. Cook the chicken breast in boiling water, 20-25 minutes until the chicken is fully cooked
2. Let the chicken cool a bit and shred the chicken with a fork
3. Heat cooking oil, lightly brown the shallot
4. Remove the shallot
5. With small to medium flame, fry the chicken in the remaining oil
6. After 10 minutes, season with soy sauce, sugar and white pepper
7. Fry another 10 minutes and till the dryness at your preference
8. Flavor with little salt, garnish with fried shallot and serve with rice, porridge or noodle
Note: You may add in a egg during the frying for another layer of flavor. Reserve the stock as soup base for another dish.
