Stir fried Bitter Gourd

Ingredients:
1 medium size bitter gourd
4 oz beef, thinly sliced
1 oz bean sprout, tail removed
1 large egg
1 big garlic clove, minced
3 tsp canola oil



 Directions:
(1) Cut the bitter gourd into halves
(2) With a small spoon, remove the seeds and white pith from the middle of the melon
(3) Soak the slices in cool water with little salt, 20 minutes
(4) In high boiling water, lightly cook the beef slices, 3 minutes
Tips: You may reserve the stock for other dish
(5) As the bitter gourd is ready, drain and squeeze out excessive liquid
(6) Rinse well the bitter gourd under running water
(7) Heat canola oil, stir fry the bitter gourd and garlic cloves
(8) Cover and cook for 8 minutes in low heat
(9) Stir in the beef slices, cook another 5 minutes
(10) Coat in a lightly beaten egg (add more oil as necessary)
(11) Stir in bean sprout, 1 minute
(12) Dish is ready when the egg is set, season with salt and pepper
