Ginseng Chicken Soup

Ginseng Chicken Soup is our tradition family big dish, taken regularly to boost up immune system. There are many types of ginseng, and they are greatly favored by Chinese, Japanese and Korean. Ironically, American Ginseng (or Wisconsin Ginseng) is known as the purest and highest quality ginseng in the world!

Avoid too many herbs in order to reserve the natural taste of Wisconsin Ginseng.



Ingredients:
1 whole small chicken
8-10 Wisconsin Ginseng
2 Tbsp Wolfberry(枸杞子)
3 big ginger slice
1 oz Enoki mushroom
water just enough to cover the chicken


Directions:
(1) Gently wash Wisconsin Ginseng and soak in clean water, 8 hours to overnight
(2) Slice the ginseng, cook and boil in 3 cups of water, 2 hours in low heat
(3) Wash and rinse well the chicken, remove excessive fat under the skin
(4) Put chicken and ginger in (2), add some water to just cover the chicken
(5) Cook (4) for another 1 hour in low heat
(6) Finally, add in mushroom and wildberries, cook another 20 minutes
(7) Flavor with salt and pepper (optional)
(8) Serve with little white wine is a plus (for adults)

Note: The hormone free chicken can easily be found in stores like Sunflower Farmer Market, Walmart, Kingsoopers or Albertsons. Using Asian local farm raised chicken even better.
